We had this at friends of our house the other night. It was great! Not for the pups though.

 

HAM & BLACK BEAN SOUP

Broth:

In a large pot, cover ham bone with water (about 12 cups).

Bring to a boil and simmer 2 hours.

Allow to cool and strain broth into two 8 cup containers.

Each container of broth will make a large pot of soup.

Cool in fridge overnight, skim off fat. Freeze one container for later use, or make two big pots of soup and then freeze.

Soup (X2):

1 c diced onion

1 T olive oil

1 container of broth

1/2 t pepper

1 c pearl barley

1 T roasted garlic

2 vegetable bullion cubes

2 c cubed cooked, diced ham

1 can black beans, drained and rinsed

Tabasco sauce to taste

Heat oil, cook onion until clear.

Add remaining ingredients and bring to a boil.

Simmer one hour.
